2 puzzle: you have very nerely answered correctly. The answer is wines.
2 Pat: you have apparently guessed correctly, but have come to a different conclusion than have I. I'll try to explain. A wine is the culmination of a process that certainly involves additions of effort, care, ingredients and environments. The wine itself is the result of these and so if one views the wine as a goal or perhaps a perfect culmination of processes, then to say that we add nothing or take nothing away is to say that we do not allow ourselves to tweak with things in order to be cute or commercial or impressive. We merely adhere to the discipline required to achieve the perfect result for a perfect "insert wine of choice".. It is the spirit from which I believe Mr. Ray speaks...

Actually, his wine making philosophy might be admirable, but it is technically impossible.
